Banana Bread – Vegan Recipe

Banana bread is often made with butter, eggs, and other things that aren’t plant based or vegan friendly. So, why not make a banana bread that IS vegan friendly? Some keys to an extra flavorful banana bread we suggest using overripe bananas. Their skins will start turning dark brown and the bananas themselves will be soft, almost squishy. These bananas will be sweeter and thus perfect for baking. Applesauce is a great replacement for some non vegan traditional baking ingredients. It is also lower in calories and fat than those ingredients.

If you want to spice up your banana bread you can add a touch of cinnamon or freshly ground nutmeg. Make sure not to add too much however, as you will quickly overpower the banana flavor. If you live on the wild side, you can also dark chocolate chips, chopped toasted walnuts, raisins, or cranberries! We find storing the bread in the fridge if we plan on eating it within a few days works fine. For long term storage, wrap it up tightly and freeze. Thaw when you are ready to eat it. You can (dare I say) pop a slice in the microwave for a few seconds to heat it up without ruining the texture. Top with some vegan butter or vegan cream cheese for an extra special treat!

1 Cup Sugar

1/2 Cup Apple Sauce

3 – 4 Bananas

1/2 Cup Non Dairy Milk

1 teaspoon Vanilla Extract

1 teaspoon Baking Soda

1 teaspoon Salt

2 1/2 Cups Whole Wheat Flour

(egg replacement)

2 Tablespoons Flaxseed

5 Tablespoons Water
